Peanut Soup

Peanut soup is very popular among Africans, this is the Ghanian version.

Several African communities share this same recipe. However, this is indigenous to the Hausa people from Northern Ghana.

Peanut butter soup (Nkate nkwan) has become one of Ghana’s most famous national dishes

The main ingredient is peanut butter.

I used a combination of goat meat and chicken in this recipe, but you can use plain chicken breast, beef or any meat at all.

Ingredients

  • 1 cup peanut butter
  • 2.2 lb / 1kg meat chicken & goat
  • 2 large tomatoes
  • 2 medium-sized onions
  • 6 Scotch bonnet peppers
  • 1 Seasoning / bouillon cube
  • Half teaspoon rosemary
  • 1 finger ginger
  • 2 Garlic cloves
  • 2 tbsp tomato paste.
  • Salt to taste.

Instructions

  • Combine garlic, ginger, half cup of water, one onion, tomato paste, rosemary, 3 scotch bonnet peppers and blend to paste.
  • Strain into the meat in a pot. Sprinkle the seasoning cube and a pinch of salt.

  • Set on heat and let it boil for 7-10 minutes, add more water and let the meat cook till it is easy to chew. Should take 15-20 minutes. Set aside.
  • In another pot, combine fresh tomatoes, the remaining onion and set on heat. Add 2 cups of water and let is boil for 5 minutes.
  • Let it cool for a few minutes.
  • Transfer into a blender, add the peanut butter and blend everything to paste.
  • Strain into the pot containing the meat. Stir, add another cup of water, let it simmer on medium heat for 15-20 minutes.

  • It should thicken as it cooks.
  • Add extra scotch bonnet peppers for extra heat and color, I used a combination of red, green and yellow scotch bonnet peppers.
  • Stir, Let it simmer on low heat for 5 minutes, serve with fufu.
